Tater Tot Enchilada Bake

I decided to have a Mexican Fiesta for a Birthday Party I was giving and decided to include a Taco Bar and I was looking for a side dish I could do in addition to the Mexican rice I was making and  came across this recipe for Tater tot enchilada and thought it would be perfect!....Only problem was I didn't have the extra beef or the enchilada sauce...So I decided to use cans of Hormel Chile with no beans and added some Taco seasoning to it to spice it up a bit and it worked out perfectly with a lot less ingredients!.......You can also top with sour cream when it's done.....Everyone really enjoyed it!...Here is what I did....Enjoy!
 
 
INGREDIENTS
 
2 Cans Hormel Chili (no beans)
1 Packet Taco seasoning (I used mild)
1 32 ounce Package Tater Tots
2 Cups or 1 Package Mexican cheese Blend
Green Onion and Sliced Black Olives for Garnish
 
 
Preheat oven to 350
 
In a 9 x 13 baking or casserole dish
Add the 2 cans of chili then add the taco seasoning and mix it in
 
Add the tater tots on top of the chili
then top with the Cheddar cheese

 
Bake until cheese is melted (about 20 minutes)
Top with sliced olives and green onion
and serve with sour cream if you like!

French Onion Zoodle Bake

If you like French Onion soup you are going to Love this zoodle bake!
I am always looking for something different to do with zucchini noodles and this was a very satisfying dish!.....Be sure to drain your noodles well then also pat them dry....zucchinis tend to carry a lot of water...even after baking there may be some water in the bottom of your dish, but just drain it! ....Here is what I did....Enjoy!
 
 
INGREDIENTS
 
2 medium Zucchini (spiralized)
1 large Onion (sliced)
2 Tablespoons Butter
1/4 cup Beef Broth
2 teaspoons Worcestershire sauce
1/4 teaspoon dry Thyme
salt and pepper
1 Cup shredded Fontina Cheese (I found in a brick and then shredded with a grater)
 
DIRECTIONS
 
Preheat oven to 400
 
Place zoodles in a bowl and set aside
In a frying pan melt butter then add sliced onion...cook a few minutes and then add thyme and salt and pepper
add the broth and cook about 15 minutes and until onions are caramelized
stirring to make sure it doesn't burn
 
Once onions are done add to the zoodles and mix well
 
Pour the zoodle  and onion mixture into a sprayed casserole dish
Top with the shredded Fontina cheese and Bake for about 20 minutes until cheese is melted

Baklava Bars (paleo)

One of my all time favorites is the Greek dessert Baklava!.......While being paleo, phyllo dough is a no no......but this bar at least gives you the nutty, honey flavor of it.......And this is very easy to put together and make....No baking involved you just have to toast the nuts and add the almond flour and then honey to your skillet!....Easy peasy.....Here is what I did....Enjoy!!
 
INGREDIENTS
 
1/2 Cup Chopped Walnuts
1/2 Cup Chopped Macadamia Nuts
2 Tablespoons Coconut oil
1/2 Cup Almond Meal
1/4 Cup Honey
1/4 Cup Almond Butter
1/8 teaspoon salt
2 Tablespoons Coconut Flour
1 teaspoon vanilla
sprinkle of cinnamon
 
DIRECTIONS
 
Add the nuts to a skillet with the coconut oil
toast a few minutes and then add the almond meal and salt until mixed in
 
 
Mix in the honey until its bubbly
remove and let cool a few minutes
Place mixture in a bowl and add the almond butter
vanilla and coconut flour
 
Pour in a 8x8 dish and flatten
 
Put dish in fridge for 30 minutes before cutting into bars
You can wrap each bar in plastic wrap and keep in fridge if you like
They are best if kept in fridge due to the coconut oil

Bang Bang Cauliflower (gluten free)

My husband just loves Bang Bang Shrimp......So when I saw it done with other things I had to try it!......This was really easy to make, I used Gluten free Panko but you could use regular or any bread crumb you like for that matter....These are also baked not fried so that makes them a little healthier......This sauce is what makes these amazing and you can use it for many things like shrimp, chicken, zoodles or regular pasta!.....Also you can adjust this sauce to how hot you may like by adding more Franks hot sauce...Here is what I did....Enjoy!
 
INGREDIENTS
 
1/2 head Cauliflower florets
1 1/2 - 2 cups Panko
2 eggs (beaten)
1 Tablespoon dry parsley flakes
1/2 teaspoon salt
 
Bang Bang Sauce
 
1/4 Cup Mayonnaise
2 Tablespoons Sweet chili sauce
2 teaspoons Franks hot sauce
2 Tablespoons Honey
 
 
 
DIRECTIONS
 
Preheat oven to 400
In a shallow bowl beat eggs and set aside
In another shallow bowl add bread crumbs, parsley and salt
Dip florets in egg and then dredge in bread crumbs pressing to coat
 then lay on a parchment lined baking sheet
 
Bake for 25-30 minutes until browned
While baking make your sauce adding all sauce ingredients to a bowl and mixing well
When Cauliflower is done add to a dish, drizzle sauce over
 Saving some for dipping
