Peanut Butter Cookies (flourless)

So, what do you when you have three  jars of peanut butter in the pantry.... You make peanut butter cookies of course!..... And when looking through some of my old recipes I did not want to use granulated sugar.... So I thought I would replace with confectioners sugar and brown sugar and they turned out great.... Here is what I did.... enjoy!


INGREDIENTS

1 cup Peanut Butter
1 beaten egg
3/4  cup  Confectioners Sugar
1/2 Cup Brown Sugar
1/2 teaspoon salt
1/2 teaspoon Baking soda

DIRECTIONS
Preheat oven to 350

Mix all ingredients together
Scoop about a Tablespoon of dough and roll into a ball
Place on cookie sheet and flatten dough into a circle
Mark with a fork (I used a silicone fork worked great!)

Bake for 8-9 minutes until lighly golden

Banana Power Cookies

When you have ripe bananas you have to do something with them, so I decided to try make some cookies, while also making them healthy!....I did add gluten free oats to these but if you wanted to make these Paleo you could omit the oats and replace with more Almond flour and use nut butter of your choice.....These cookies also have coconut, walnuts and I used Enjoy Life brand mini chocolate chips....I also decided at the last minute to add some flax meal to make them more fiber rich.....They turned out really good and would also make a great breakfast on the go snack....Here is the recipe I came up with....Enjoy!

 
 
INGREDIENTS
 
3 ripe bananas (mashed)
2 eggs
3 Tablespoons Honey
1 teaspoon vanilla
3 Tablespoons peanut butter
2 teaspoons cinnamon
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 cups Almond flour
1/2 cup oats
2 Tablespoons Flax meal
1/2 cup chocolate chips
1/2 cup walnuts
1/2 cup coconut flakes
 
Directions
Preheat oven to 350
 
Place bananas in mixing bowl and mash.
Add the eggs, honey, vanilla and peanut butter and mix well
Add the rest of the ingredients and stir
Add by rounded scoops onto baking sheet and bake for 10 minutes
When cool you can place in a tub and refrigerate to last longer

Pumpkin Chocolate Chip Cookies (gluten free)

With any recipe I see that looks good and I want to try, my first thought is "Can I convert this to fit my dietary needs?"......So when my daughter made these delicious pumpkin cookies that was my first thought.....The original recipe was loaded with sugar and regular flour. So I got to work to come up with this recipe.....The texture was a little different but the flavor was all there.....These cookies are like pillowy little cakes!...Very soft in texture....Anyone who likes pumpkin spice will love these and if you don't need them to be gluten free just substitute with regular flour and omit the xanthan gum...you can also use 1 -1/2 cups of the sugar of your choice. Here is what I did.....Enjoy!!
 
INGREDIENTS
 
1- 15 ounce can of 100% Pure Pumpkin
1 egg
1/2 stick Butter (melted and cooled)
1/2 teaspoon Vanilla
1/2 teaspoon salt
1 1/2 to 2 Tablespoons Pumpkin pie spice (depending how spicy you like it)
1 Cup Natural Cane Sugar
1/2 Cup Honey
 
2-1/2 Cups Flour (I used Bob's Red Mill 1 to 1 Baking flour)
3 teaspoons Baking Powder
1 teaspoon Baking Soda
1/2 teaspoon Xanthan Gum
 
1/2 Bag or about 1 Cup Chocolate Chips ( I use Enjoy Life Brand )
 
 
 
DIRECTIONS
Preheat oven to 350
 
1. Add the Pumpkin to your Mixer along with the egg, butter, vanilla, sugars and spices and mix until blended
 
2. In another bowl add all of the dry ingredients and whisk
 
3. Start adding the flour mixture to the batter until used up and you get it all blended well
 
4. Add in the chocolate chips and mix
 
5. Scoop the batter (with a large scoop) onto a Silpat lined baking sheet spread them apart and flatten the tops
 
6. Bake for 13-15 Minutes until golden

Almond Flour Chocolate Chip Coconut Bars

Being Gluten free sometimes its hard to find something to satisfy my sweet tooth!....Well these coconut bars did the trick for me!...They are made with Almond flour which I have been using a lot lately.....I also added almond butter but you could use peanut butter if you like and if you don't want to use an egg you can replace with applesauce!.....Here is what I did....Enjoy!
 
INGREDIENTS
 
1 Cup Almond flour
1/4 teaspoon salt
1/2 teaspoon Baking powder
2 Tablespoons Flax meal
1/2 Cup Pecans (chopped)
1/2 cup Mini Chocolate chips
1 egg
1/4 Cup Honey
1/2 Cup Almond or Peanut Butter
 
TOPPING
 
Coconut
Mini Chocolate Chips
 
DIRECTIONS
 
Add all of the dry ingredients to a Mixing bowl and give it a stir
Add egg, honey and nut butter and stir until combined
 
add mixture to a 8x8 pan that is lined with a piece of parchment (for easy lifting) that is sprayed with cooking spray
pat the mixture down evenly in pan
Then top with coconut and Mini chips pressing it into batter
 
Bake at 350 for 25 minutes
let cool and lift out of pan and slice as you like!

Almond Shortbread Cookies (gluten free)

Shortbread cookies are one of my favorites...I have also been using almond flour a lot lately....so this cookie is perfect and this recipe uses very little ingredients... this is such an easy cookie to make when you need a little something quick.....I literally threw these together in like 10 minutes!...I may even try to make thumbprint cookies with this dough.....Here is what I did....Enjoy!


 
INGREDIENTS
 
1 Cup Almond Flour
3 Tablespoons Confectioners Sugar
3 Tablespoons Soft Butter
1/8 teaspoon Salt
1/2 teaspoon Vanilla
 
DIRECTIONS
 
Add all of the ingredients to a bowl
I just mixed well with a fork, but you could mix in you mixer if you like.
Mix until dough forms
roll into small balls and place on silpat or parchment lined baking sheet and then mark with a fork each way
 
Bake at 350 for 8 minutes
 
This recipe makes about 15 cookies

Skinatalie Margarita's

I have to say I do love a great Margarita.....what I don't like is all of the sugar and calories in the Pre mix you have to use when making them....So I came up with my own way of making them with fresh limes and Stevia.....They quickly became known as Skinatalie's.....I regularly get requests from family and friends to make a pitcher them...they are a great summer cocktail but we make them anytime!.....You know how you see those giant bags of limes at Costco and think what in the heck am I going to do with all of those?,,,Well now you know!..I am going to base this recipe on 8 limes.....and I use a 2 ounce shot glass for measurements, I also find a hand held citrus juicer works well for squeezing limes....Here is my formula of how I make them....Enjoy!!
 
 
INGREDIENTS
 
LIMES
STEVIA
TEQUILA (silver)
GRAND MARNIER or COINTREAU
 PELLIGRINO (sparkling soda)
CLEMENTINE OR AN ORANGE
 
 
 
DIRECTIONS
 
My rule of thumb is for every fresh lime you squeeze you will add 1 shot of tequila, 1/2 shot of Grand Marnier or Cointreau  a pinch of stevia and 1/2 glass of sparkling water.. I prefer Pelligrino
 
EXAMPLE
 
8 limes (juice)
8 shots of tequila
4 shots Grand Marnier
Stevia (to your liking)
4 cups of sparkling water
I juice 1 clementine at the end for flavor!
 
Add these ingredients to a pitcher ...stir and serve over ice
 
From here you can adjust any way you like as far as more or less liquor or limes to your taste.
I have found this formula works pretty well.....Cheers!

Cutout Cookies

This cutout cookie recipe has been in the family for years!....And it is the only recipe I use for my Christmas cookies but it can be used for any occasion you need a cutout recipe for. I just recently started using this glaze (included below) for these cookies. In the past I have also frosted with canned vanilla frosting and then topped with sprinkles the choice is yours....This recipe can make up to 100 cookies so you can cut it in half if you only want to try a small batch!...Here is what I do...Enjoy!


INGREDIENTS

6 cups Flour
2 cups Sugar
8 teaspoons baking powder
6 Eggs
2 1/2 sticks Butter (softened)
3 teaspoons vanilla
1/2 teaspoon salt

DIRECTIONS
Preheat oven to 350

Mix all of the ingredients to form dough....I start with the butter and eggs then add the rest....you can use your stand mixer with dough hook
Using plenty of flour, roll out dough about 1/4 inch thick.
Cutout with your favorite cookie cutters. Place on cookie sheet.
Bake in 350 oven for 6-10 minutes or until bottom is lightly golden. These cookies do puff a little and should be very light and airy,,,not thin and crispy
When cool you can frost with my cookie glaze that dries hard and shiny

GLAZE

2-1/4 cups Confectioners Sugar
2 Tablespoons light corn syrup (Karo)
2 Tablespoons milk + more
1-2 drops almond extract

Add sugar to mixing bowl add corn syrup....then add milk 2 Tablespoons at a time and mix until it becomes a spreadable consistency...you can add food coloring or a different extract flavor if you like

Cherry and Apple Pie Oatmeal Cookies

Well, I have been working on this recipe for a couple of days trying to perfect it!.... Coming up with a recipe that is gluten free and with low or no sugar can be quite difficult, the dried cherries and tart apples add some sweetness to these, you could also add chopped walnuts if you like! I used gluten free flour, but you could use regular in the same amount and omit the xanthum gum...Also if you are not worried about sugar you can use brown sugar instead of the honey.....Here is what I did....Enjoy!

 
 
INGREDINTS
 
(Dry)
1  1/2 cup quick oats
3/4 cup flour (I used gluten free)
1  1/2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons cinnamon
1  1/2 teaspoon xanthum gum (if using gluten free flour)
 
(Wet)
2 eggs beaten
1 stick softened butter
2 Tablespoons coconut oil (melted)
1 teaspoon vanilla
1/2 cup honey (or 1 cup packed brown sugar)
 
1 cup dry cherries
1 green apple (peeled and diced)
 
DIRECTIONS
Preheat oven to 350
 
Add all of the dry ingredients to a bowl and whisk to mix
in another bowl add all of the wet ingredients and whisk together
Add the wet to the dry to incorporate together
then add the cherries and apples
Drop by spoonful onto lined cookie sheet and bake for about 12 minutes until golden

Power Fiber Cookies

Well if you are in need of some fiber in your diet then these power cookies are for you!....They are also gluten free and the only sweetener added is a little honey......So overall these are pretty healthy for you.....And I just love the addition of the dry cherries in here but you could also add what you like...sliced almonds, raisins or chocolate chips would be great also!....Here is what I did...Enjoy!

 
 
INGREDIENTS
 
1 Egg (beaten)
1 Tablespoon Honey
1/2 Cup Peanut Butter
1/2 Cup canned Pure Pumpkin
1/2 Cup Applesauce
 
1/2 Cup +2 Tablespoons Arrowroot Powder
1/2 teaspoon Baking Powder
1/2 Cup Flax meal
2 Tablespoons Chia Seeds
2 teaspoons Cinnamon
1 teaspoon Nutmeg or Allspice
1/4 teaspoon Salt
3/4 Cup Dry Cherries
 
 
DIRECTIONS
Preheat oven to 350
 
In a bowl add the egg and beat with a whisk.....then add the honey, peanut butter, pumpkin and applesauce whisking together until creamy
Fold in the rest of the ingredients and mix well
Drop onto silpat or parchment lined cookie sheet and bake for 12 minutes

Gilligan's Island (cocktail)

I love a great cocktail.....And this one has all of my favorite things in it!.......Enjoy

 
1 ounce Vodka
1 ounce peach schnapps
3 ounces orange juice
3 ounces cranberry juice
 
Combine all liquids into an ice filled cocktail shaker.....cover and shake well

Peanut Butter Cookies (gluten free)

I just love peanut butter cookies!......And the other day I could really go for them!....So I thought I would try to come up with a gluten free recipe. If you aren't worried about gluten you can just use the same amount of regular flour,,,,,you can also add chocolate chips to this if you like....Here is what I came up with.....Enjoy!!
 
 
INGREDIENTS
 
1 Cup peanut butter
1/2 Cup brown sugar
1 egg
1/2 Cup gluten free flour (I use Bob's Red Mill)
1/2 teaspoon baking powder
1/2 teaspoon vanilla
pinch salt
 
 
DIRECTIONS
 
Preheat oven to 350
 
In a bowl mix all ingredients together well.
Scoop about about a Tablespoon of dough place on a silpat lined cookie sheet and pat down to form circle....be sure to leave space between each cookie,,,the do puff out a little bit..these were thinner and a little crispy,,,if you want them chewier just don't pat down as much..I used a fork to criss cross a pattern
Bake for 10 minutes

Cookie Glaze (dries hard and shiny)

Here is a great recipe for a Glaze for your cutout cookies!,,,I just recently started adding the secret ingredient to making this glaze dry hard and stay shiny,,,,it is light corn syrup!,,,,I love the way  this looks on my cutouts!,,,,I left mine white but you can add food coloring to make this any color you like, also add any sprinkles you want right after your frost, it dries really quick! I also added a drop of almond extract to mine but you could add whatever flavor you like also!,,,Here is what I did....Enjoy!

 
 
 
INGREDIENTS
 
 
2- 1/4 cups confectioners sugar
2 Tablespoons light corn syrup
2 Tablespoons milk + more
1-2 drops almond extract
 
 
DIRECTIONS
 
Add sugar to mixing bowl add corn syrup,,,,then add milk 2 Tablespoons at a time stirring with a fork until it comes to a spreadable consistency,,,,add extract or food coloring if you desire!
