INGREDIENTS
1 small onion chopped
2 T oil
3 carrots Diced
3 ribs celery diced
1 small head cabbage chopped
1 can cannellini beans drained
1 46 oz can Tomato juice
2 - 11 1/2 oz cans V-8 juice
salt and pepper
DIRECTIONS
Saute oil and onion in Large pot until translucent,,,add all of the vegetables and beans
Pour in the juices
bring to boil ,,,then simmer 45-60 minutes
until carrots are tender
