Shrimp Boil Foil Packets

When I saw these shrimp foil packets I knew I had to give them a try....and I am glad I did...They were so simple and I Love that everyone gets their own individual little packet that has their whole dinner in it!!....I prepped by cutting everything in advance and then assembled the packets in heavy duty aluminum foil before my husband cooked them on the grill....You can also do these in the oven if you like by placing them on a baking sheet....I will let you know what I used and how I assembled and cooked them!....Here is what I did.....Enjoy!
Raw Shrimp (no tails) (I used 6 per packet)
Red Potatoes (diced)
Corn (on cob slice into 4 pieces)
Smoked Kielbasa or Andouille sausage (slice in diagonal pieces)
Olive oil
Minced garlic
Old Bay seasoning
Heavy Duty Foil
Prepare all of the Ingredients to start assembling packets
Tear off a large piece of foil......in center add a splash of olive oil and about 1/2 teaspoon of minced garlic
Start adding Potatoes first (about 12)
Corn (2)
Sausage (4)
Then Shrimp (6)
Drizzle with olive oil sprinkle with Old Bay seasoning and then a Tablespoon of butter
and fold over foil on both sides and then bring in each side to meet like a triangle and then fold in
Cook packet on grill for about 20 minutes flipping after 10 minutes
If doing in oven...place on a cookie sheet
Bake at 400 for about 20 minutes
flipping after 10 minutes

Paleo Tortilla Chips

This recipe is actually the same recipe for my Tortilla's ....I just cut them with a pizza cutter after making them and baked them after brushing them with olive oil and sea salt....They were very good!...I am always looking for something I can use for dipping into Guacamole or other dips...I can even make Nachos out of these.....
So I will post my Tortilla recipe then you can cut and bake them for these Chips!
2 whole eggs + 1 egg white
1 Cup Almond milk
1 Tablespoon Olive Oil
3/4 Cup Tapioca Flour
3 Tablespoons Coconut flour
1/4 teaspoon Salt
Whisk all ingredients together until there are no lumps
Let the batter rest for a couple of minutes
Heat your crepe pan on Medium heat...once hot add a little coconut oil to pan and add 1/4 cup of batter to center
hold the handle to swirl batter around in a circle then let cook until golden then flip and cook the other side
Once made and cooled slice in half both ways with a pizza cutter then slice again to make your triangle shapes
....brush with olive oil and sprinkle with sea salt and bake at 400 for about 10 minutes or until browned
Here is this recipe used as a tortilla or a crepe

Blueberry Scones (Paleo and Gluten free)

My goal in converting regular recipes to be gluten free or paleo is to have them taste as close to the original as possible.....I think this scone recipe really does!....I added blueberries to them because that is what I had on hand, but this can be your basic scone recipe and you can add to it whatever you like!...You could add cinnamon or nuts or lemon and poppy seed or even chocolate chips would be really good!... You could even add ham and cheese for a breakfast scone.......Here is what I did....Enjoy!
2 cups Almond flour
1/4 cup Arrowroot flour
1/2 cup Coconut flour
1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
2 Eggs
1/2 cup Honey
2 Tablespoons Ghee, soft butter or coconut oil (your choice)
1 teaspoon Vanilla
1 Cup Blueberries
preheat oven to 350
In a mixing bowl add all of the dry ingredients and give it a stir to mix
In another bowl add all wet ingredients and whisk together
Add the wet to the dry and mix together with a spoon then add blueberries and gently fold in with your hands
......once dough is formed place the dough on a parchment lined baking sheet and press to form into a circle, making sure it is even
Cut circle into half and then half the other way and then slice those pieces in half to get 8 slices
Spread the pieces apart a little and then bake at 350 for about 18-20 minutes or until golden
Cool and Enjoy!
