Sweet Potato Fries

I have been enjoying Sweet Potatoes a lot lately!.....On my restricted diet I cannot have white potatoes, so these Sweet Potato fries are the next best thing!,,,,These are very easy to put together and the seasoning with brown sugar gives them the little kick they need!,,,Here is what I did...Enjoy!!
 
 
INGREDIENTS
 
2 Large Sweet Potatoes (sliced)
 
1/4 teaspoon cumin
1/4 teaspoon Lawry's seasoned salt
1/4 teaspoon granulated garlic
1/4 teaspoon sea salt
1 Tablespoon brown sugar
 
olive oil
 
DIRECTIONS
 
In a small bowl mix all of the spices and brown sugar together and set aside
 
Cut sweet potato in half lengthwise, then lay on flat side and start making slices.......then cut those pieces into thin slices like pictured
 
Add cut fries into a bowl.....add enough olive oil to coat (not to much)...and then add bowl of seasoning and brown sugar and toss, mixing well.
Prepare a cookie sheet with a piece of parchment paper and arrange coated fries on it, being sure that they are in a single layer, you can sprinkle with more sea salt if you like
Bake for 15 minutes and then flip them over and bake for 12-15 more minutes (depending in thickness of your fries)

Power Fiber Cookies

Well if you are in need of some fiber in your diet then these power cookies are for you!....They are also gluten free and the only sweetener added is a little honey......So overall these are pretty healthy for you.....And I just love the addition of the dry cherries in here but you could also add what you like...sliced almonds, raisins or chocolate chips would be great also!....Here is what I did...Enjoy!

 
 
INGREDIENTS
 
1 Egg (beaten)
1 Tablespoon Honey
1/2 Cup Peanut Butter
1/2 Cup canned Pure Pumpkin
1/2 Cup Applesauce
 
1/2 Cup +2 Tablespoons Arrowroot Powder
1/2 teaspoon Baking Powder
1/2 Cup Flax meal
2 Tablespoons Chia Seeds
2 teaspoons Cinnamon
1 teaspoon Nutmeg or Allspice
1/4 teaspoon Salt
3/4 Cup Dry Cherries
 
 
DIRECTIONS
Preheat oven to 350
 
In a bowl add the egg and beat with a whisk.....then add the honey, peanut butter, pumpkin and applesauce whisking together until creamy
Fold in the rest of the ingredients and mix well
Drop onto silpat or parchment lined cookie sheet and bake for 12 minutes

Lemon Loaf (Gluten Free)

Well I have been seeing a lot of the copycat recipes for Starbucks Lemon pound cake and it looks so good!!.....But I can't have any of the ingredients so I wanted to try a recipe that I could enjoy!....I am trying to cut sugar also and although there is only honey in the actual loaf the icing does have powdered sugar in it so you can omit if you like. This was really easy to put together also......here is what I did.....Enjoy!!


 
 
Dry Ingredients
 
1 1/2 cups Almond flour
3 Tablespoons Coconut flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
zest from 2 lemons
Add dry ingredients to bowl....whisk to remove lumps and set aside
 
Wet Ingredients
 
3 eggs whisked
juice of the 2 lemons you zested
1 teaspoon vanilla
 1/3 cup coconut milk
1/3 cup honey
2 Tablespoons melted butter or coconut oil
1 teaspoon lemon extract
 
Icing
 
1/2 cup powder sugar
1 Tablespoons water
1 teaspoon lemon extract
 
Preheat oven to 350
 
Add wet ingredients to bowl and whisk together start adding the dry ingredients and mix until incorporated ...do not over mix
 
 
 
 
Prepare a loaf pan with parchment overlapping pour mixture in spreading evenly and bake at 350 for 35-40 minutes test with a toothpick making sure it is clean.....my loaf took exactly 35 minutes
 
Ice when loaf is cool

"Fish & Chips"

Everyone got such a kick out of this snack I served at my sons Birthday party!....So I thought I would share....What an easy thing to put together for a party or a quick snack!!.....Make a cute sign throw some Goldfish and Wavy potato chips in a bowl and have fun with it!....Enjoy!
