Avocado Egg Salad Lettuce Wraps

I just love egg salad!...I also love avocado, so why not put them together!....This has such a great flavor...I made a lettuce wrap with mine but you could make a sandwich or a pita wrap with it......I also think avocado would be a great addition for deviled eggs, I am definitely going to try it next time I make them!....I also added a tablespoon of organic mayo to this, you could use regular or it can be omitted if you mix the avocado creamy enough...How healthy is that!....Here is what I did....Enjoy!!


 
 
INGREDIENTS
 
4 hard boiled eggs
1 ripe avocado
1 T mayo
1 green onion (chopped finely)
a squeeze of lemon or lime
salt and pepper to taste

 
DIRECTIONS
 
In a bowl add ripe avocado and mash with a fork, mix until creamy add mayo, onion and salt and pepper... add the eggs and continue to mash until incorporated

Tuna Salad Lettuce Boats

So how this recipe came about was I was making Tuna macaroni salad for my daughter and her friends and I couldn't have any because of the noodles in it, and it looked so good!!.....So I decided to make some for myself minus the macaroni!...So if you want to make tuna macaroni out of this just add some small noodles of your choice (elbows, rotini, penne) ,,,,,I scooped this into a romaine lettuce leaf but you could put it in a tomato or an avocado....or spread it on a cracker! And I just love the peas in here!......This makes a great entrée for a luncheon or just for a snack!...Here is what I did....Enjoy!

 
 
INGREDIENTS
 
1 can albacore tuna
1/2 Cup frozen peas
1 small shallot (diced fine)
mayonnaise
salt and pepper
(you can add finely diced celery if you like)
 
DIRECTIONS
 
Add frozen peas to a large measuring cup and add hot tap water let set a few minutes to thaw.
 
Place can of tuna and the rest of the ingredients in a bowl and mix well until everything is combined....Use enough Mayo to make it creamy,,,,,scoop into a lettuce leaf or spread on a cracker as desired!
Or add some cooked macaroni to make a tuna macaroni salad

One Pan Chicken Dinner

This is a very simple recipe that you can do many variations of!.....You can use redskin potatoes instead of sweet potatoes and for the vegetable I used fresh broccoli but you could use fresh green beans or cauliflower.......You can also add brown sugar and butter over sweet potatoes if you like....And I just added some seasoning on the chicken but I am sure you could bread it with breadcrumbs also!,,,,The ease of having everything cook together makes for a really simple dinner!......Here is what I did....Enjoy!!

 
 
INGREDIENTS
 
3 Chicken Breasts (cut in half)
1 Large Sweet Potato (cut in chunks)
1 head Broccoli (florets)
1 Cup Chicken Broth
Seasoning for chicken (your choice)
salt and pepper
(you can also add a shallot or a chopped leak to this dish)
 
 
DIRECTIONS
 
Preheat oven to 350
 
In a 9 x 13 Baking dish add halved chicken breast down the center
Then add chunked sweet potatoes on one of chicken.....add broccoli to the other side,,,season chicken and salt and pepper the potatoes and broccoli... then pour chicken broth over.
Cover tightly with foil and bake for 1 hour
 
This fed 3 people,,,,I figured 1 whole chicken breast per person....if you need to feed more you can double this recipe in another pan

Orzo-Veggie Soup

So, how I came up with this soup is by using what I had on hand,,,,And I am so happy with the results,,,,The combination of using diced sweet potatoes and zucchini made this very tasty!,,,,,Being gluten free I reserved some for myself before I added the orzo for the family. I will definitely be making this again and maybe even add a few more veggies I think celery would be very good addition or even kidney beans,,,Use what you like, but I highly suggest the use of sweet potatoes in here!...I also used Orzo because that is what I had on hand but you could use any small pasta or even Rice would be good,,,Here is what I did.....Enjoy!!

 
 
INGREDIENTS
 
 
2 T olive oil
I large sweet potato (diced)
3 carrots (diced)
1 large zucchini (quartered and diced)
1 small shallot or onion (diced)
2 cups chopped spinach
8 cups Chicken Broth
salt and pepper
1 cup Orzo (cooked)
 
 
DIRECTIONS
 
Saute potatoes, carrots, zucchini and shallot for 10 minutes
add chicken broth and spinach bring to boil then cover and simmer for about 25-30 minutes until carrots and potatoes are soft then add cooked Orzo,,,salt and pepper to taste and serve topped with parmesan cheese!

Apple and Onion Pork Tenderloin (slow cooker)

So what do you do with a pork tenderloin??.....Well  there are a lot of recipes out there  for pulled pork in the crock pot, using barbecue sauce but with my restricted diet and not being able to have tomatoes, I wanted to try something else,,,I saw some recipes using apples and onions for flavor and I thought I would give it a try,,,I changed up the sauce a little bit and this is what I came up with!....Enjoy!


 
 
INGREDIENTS
 
1- 1/2 to 2 pound Pork Tenderloin
2-3 Green Apples (chopped)
1 medium onion (sliced)
1/2 Cup chicken Broth
2 T apple cider vinegar
1 T mustard
3 T honey
 
Spices:
granulated onion
granulated garlic
ground thyme
salt and pepper
 
 
DIRECTIONS
turn crockpot to low
 
Place chopped apple and onions in bottom of crock pot lay pork tenderloin on top and sprinkle pork with spices....
In a bowl whisk together the chicken broth, vinegar, mustard and honey
Pour over tenderloin and cook on low for 8-10 hours
