Italian S~Cookies

Now these cookies are one of my favorites! A must for us around the Holidays, but they can be made any time of the year,,,they would make a great Easter cookie also!,,,And if you wanted you could shape them into another letter,,,just remember that these cookies do puff up once cooked so you may want to test first,,,This is a real nice dough to work with!


2 sticks of butter (softened)
6 eggs
1 Cup milk
1/2 Cup oil
2 teaspoons vanilla
2 Cup sugar
4Tablespoons baking powder
8 Cups flour

add baking powder to flour in a bowl, mix with a whisk and set aside
in mixer add butter, eggs and sugar, mic until creamy..then add milk, oil and vanilla
slowly add flour mixture until dough forms, take out of mixer it may be a little sticky but add flour  and knead until nice dough forms
pinch off about 1 T of dough and roll into about a 6 inch log then roll in the ends in opposite direction to center,,,,lay onto a parchment or silpad lined cookie sheet
Bake at 350 for 10~12 minutes,,,cookies should be light in color
when cool frost with glaze icing (recipe below) then top with sprinkles



You can also try this recipe below for icing,,,this is what I have been using lately,,,this will harden and stay shiny!,,,great for cutout cookies also!

INGREDIENTS


2- 1/4 cups confectioners sugar
2 Tablespoons light corn syrup
2 Tablespoons milk + more
1-2 drops almond extract

mix all ingredients... adding milk until desired consistency
This recipe makes 8 dozen Cookies
